How To: Watermelon Rice Krispie Treats
What's a party without a sweet treat?! Whether for a kid's craft or a girls-night dinner party, Watermelon Rice Krispie Treats are a must and are for sure to brighten up the dessert table! The best part about this recipe is that it is oven-less! This entire dessert can easily be made using a microwave! We tried it at our Ooh La La Headquarters!
Here is what you will need. . .
Recipe makes 1 tray of treats (8 slices)
Rind
- 1 1/2 Tbsp salted butter
- 2 1/2 cups mini marshmallows
- Green food coloring (I used gel coloring)
- 2 cups rice krispies cereal
Center
- 2 Tbsp salted butter
- 3 1/2 cups miniature marshmallows
- Pink or red food coloring
- 3 cups rice krispies cereal
- 2 tsp mini chocolate chips
Also a 9-inch round cake pan 7 non-stick cooking spray
Spray the inside of you 9-inch round cake pan to avoid your treats to stick. For the rind portion, melt 1 1/2 Tbsp butter in a microwave safe bowl. Add in 2 1/2 cups marshmallows and green food coloring and microwave for approximately 1 minute until the marshmallows have melted. Add 2 cups rice krispies, stir until evenly coated. Pour mixture into the sprayed baking pan and let it cool so it is not hot to the touch. Once comfortably cooled, press the green mixture to the outer edges of the pan creating a rind for you watermelon, no more than one itch thick around the pan.
TIP: Spray your hands with the non-stick cooking spray to avoid super sticky hands!
Next is the center of the watermelon. In another microwave safe bowl, melt 2 Tbsp of butter. Add 3 1/2 cups marshmallows and pink or red food coloring and cook in the microwave for approximately 1 minute and stir just until fully melted. Once melted stir in 3 cups of rice krispies, stir until evenly coated. Pour into center of cake pan and again, let it cool then spread the mixture evenly. Let it cool and press mini chocolate chips into the pink portion of the treat. Cut into 8 triangular slices and even add popsicle sticks & enjoy!
